Gluten Free Salted Chilli Prawns

Once again, more Asian food! This recipe for salted chilli prawns or salted pepper prawns depending on what you like to call them is so so good! They taste just like the ones you get from the Chinese, if you've been lucky enough to get a Chinese to make your gluten free ones or if you tried them before you were diagnosed or snuck one to try naughtily when no one was looking...we've all been there let's not lie or judge!
Now you don't need to feel guilting for trying one as you can make a big gluten free batch at home & I promise you everyone will love them!

Ingredients:
2 tbsp cornflour
sunflower oil, for deep frying
200g small peeled prawns
2 tbsp sea salt flakes
large pinch of chilli flakes
1 fresh chilli, chopped
3 spring onions, chopped to serve
Pepper, to taste
Gluten Free Soy Sauce *optional
Method:
Combine cornflour with salt, chilli flakes & a decent grind of pepper.
Heat 7.5cm of oil in a large wok or deep heavy-based saucepan. You can test the temperature by frying a small piece of bread – it should sizzle instantly and take 20 secs to turn golden.
Toss prawns in cornflour mix, shake off excess & deep-fry, in batches, for 1-2 mins or until crisp, golden in colour & starting to curl.
Remove with a slotted spoon, drain on a baking tray lined with kitchen paper & keep warm while you cook the remaining prawns.
Scatter over diced fresh chilli & spring onion & serve with soy sauce & a drizzle of sweet chilli sauce if you like.
