Healthy Authentic Pad Thai

If you are like me & love Asian food, then you'll love this recipe! It's super healthy, & super quick to make, not to mention easy to make! I love cooking stir fry recipes because it means not really having to measure everything out. As long as you no the basics to a recipe you can just wing it all in the wok & you're done! Not to mention you have very little to wash up... BONUS!

Ingredients:
Dried rice stick noodles (enough to serve 4 people)
3tbsp sesame oil
2 eggs, lightly beaten
2 gloves of garlic, crushed
g of small prawns, peeled
bean sprouts
2 spring onions
3tbsp Thai fish sauce
1 tbsp tomato ketchup
2 tbsp lime juice
1/2 tsp chilli flakes
1 tbsp brown sugar
2 tbsp roasted peanuts, crushed
1 tbsp coriander sprigs
1 lime
Method:
Cover the noodles with boiling water and leave for 10 minutes or until al dente. Rinse in cold water and drain well, then use 1 tsp of oil to coat your hands & run them through the noodles to help prevent sticking.
To make the omelette, heat 1 tbsp of the oil in a wok & swirl to coat the surface. Pour in the beaten eggs & swirl to make a very thin omelette. Run a knife around the edge, turn out, slice into strips & set aside.
Add remaining oil to the wok & heat. Add the garlic & the prawns and toss over high heat.
In turn, add the noodles, omelette strips, bean sprouts, spring onions, fish sauce, ketchup, lime juice, chilli and sugar, tossing constantly over high heat.
To serve, scatter with crushed peanuts, coriander leaves & quartered limes.
