After years of seeing my family & friends devour donuts, & enduring the unbearably good smell as I walked by the dunkin' donuts shop & never being allowed to buy any because they wern't gluten free I finally decided to make donuts! Not the healthiest snack I've ever made but who cares, I finally had gluten free donuts & OMG I swear they were worth the years of waiting. The small plate of donuts the recipe made was gone in 5 minutes as my family members cleaned them off as well as myself. As they were warm & fresh from the fryer they tasted so much better than the donuts they would buy from the supermarket. Safe to say these donuts definitely went down well!

Recipe:

225g of plain flour

Pinch of salt

1 tsp of baking powder

115g of caster sugar

1 large egg

120ml of milk

50g of butter (melted)

Oil for deep frying

Cinnamon or sugar for dusting

Method:

Sift dry ingredients together in mixing bowl.

Whisk eggs, milk & butter together & pour gradually into dry ingredients, stirring until well blended with wooden spoon. Then use your hands to form a soft dough.

Lightly flour work surface & knead dough for about 10 minutes until smooth.

Divide into 6-10 pieces depending on the size you want. Roll into balls, slightly flatten & then make a hole in the centre with handle of wooden spoon.

Heat oil for deep frying to temperature of 190•C. Fry the donuts in small batches until they are puffy and golden brown, turning once or twice during cooking.

Lift out using slotted spoon and let lie on kitchen roll to drain excess oil.

Lightly coat in cinnamon or sugar & leave to cool.
