Super Duper Healthy Granola Bars

Most health bars as we know contain wheat & gluten so make your own! These bars are nicer than any pre made store bought bars I have ever had, & anyone else who has tried them will agree with me. I understand some coeliac's cannot eat oats so I apologise in advance if you cannot make these. I am however ok with oats & have never had an issue with them. However I do take precautions & I buy gluten free oats which you can get in the gluten free aisle in your local supermarket or on prescription. Give these a go, they won't last long & if they do you can freeze them so you always have some ready!

Recipe:

1 cup of packed pitted dates (soaked in hot water to soften)

1/4 cup of honey (maple syrup or agave if you are vegan)

1/4 cup of natural peanut of almond butter

1 cup of unsalted almonds, loosely chopped

1 1/2 cups of gluten free oats

additional options: chocolate chips, dried fruit, nuts, banana chips, vanilla, etc.

 

Method:

Chop dates finely in a food processor until small bits remain & it forms a dough like consistency.

Toast your oats at 180•C in oven for 15 minutes (until golden) or you can leave them raw depending on flavour preference.

Place oats, almonds & dates in a bowl & set aside.

Warm honey & peanut butter in sauce pan on a low heat until runny. Stir & pour over oat mixture, mixing thoroughly.

Transfer mixture to greaseproof paper lined tray. Press down until uniformly flattened. Cover & set in fridge for 20 minutes to harden.

Remove & chop into 12 even bars. Store in airtight container for up to a week.
